| Boil-
We collect about 700 gallons of wort in the kettle after the lautering
process. By using steam jackets that surround the kettle, we bring
the wort to a boil for an hour and a half. Boiling the wort serves
many purposes. Namely, it stabilizes the composition of the final
wort, clarifies the wort, sterilizes the wort by killing bacteria,
and contributes color to the final beer. Additionally, throughout
the boil we add four different types of domestic hops to the boil.
