Lautering-
the next stage is to transfer the wort to the next brewing vessel,
called the kettle. The bottom of the mash/lauter tun is equipped
with a layer of screens, thereby allowing the brewer to separate
the wort from the kernels of malted barley as it is transferred
to the kettle.
The
spent grain, called draff, that is left over is later removed and
used for composting or for animal feed. Although the grains after
the mashing and lautering process contain little flavor to a human,
we've been told by a local farmer that, "brewer’s malt to a
cow in the winter is like a popsicle to a human in the summer."
Additionally, many nutrients are still contained in the grains after
the brewing process.
